Blueberry Pancakes

Ingredients
1 1/2 cups flour
2 tbsp sugar
1 cups milk
1 tbsp baking powder
fresh or frozen blue berries
1 egg
pinch salt
baking spray or butter
butter for topping
maple or pancake syrup

Directions
If your using frozen blueberries, make sure they are defrosted ahead of time and patted dry.
Add the flour, salt, baking powder, and sugar to a mixing bowl. Whisk until they are well combined.
Add in the egg and the milk. Whisk until everything is well incorporated and a nice, thick batter forms.
Coat a nonstick, preheated pan with baking spray or butter. You can also use a pancakes griddle, if you wish.
Scoop up about 1 ladle full of the batter and pour it in the pan. Distribute the blueberries by dropping them into the pancake. Allow it to cook, over medium heat, until the top layer of the mixture begins to bubble and the bottom is lightly browned.
Flip it to the other side. Allow it to cook for a minute or until the pancake is lightly browned on both sides.
Serve your blueberry pancakes up with a slice of butter on the top and maple syrup poured over it. Enjoy!
